For the Love of Roasting
Now that it is fall there is so much to think about when it comes to planning. Do you have Halloween costumes to plan for? Do you kids have a lot of parties that you need to plan? This time of year is great for roasting; there are so many season vegetables that roast perfectly and are absolutely delicious. Your family will love it when you serve them a sensational meal that took minutes for you to prepare. Roasting vegetables is a fast and easy way for you to keep those nutrient packed bites of sunshine in your diet without worrying about butter or fattening calories.
Some of the best veggies for roasting can be found year round but since its fall make sure to grab a pumpkin. Pumpkin seeds are great kid-friendly snacks and taking the ‘guts’ out of a pumpkin is fun for the whole family. Roasted pumpkin can be put into almost anything! Pies, soup, even a puree can be given to a sick kittens. That’s just how yummy and safe pumpkin is. Roasting pumpkin seeds is a great way to introduce your kids to the kitchen. They’ll be able to dive into their “food” and feel like they are part of the process. While your family is helping you prepare their weeks’ worth of snacks you can kick back and have a steamy cup of Nuez de la India.
In addition to pumpkins, squash and zucchini are great roasting veggies. With a texture that is similar to pumpkin (but minus the seeds and all of the leg work) these vegetables can be a great side for your weekly meal prep. If you roast either of them they simply needs a little olive oil, salt, and pepper then pop them in the oven until they are the consistency that you like. Having zucchini around the house means that you can make zucchini noodles whenever you want as well!
A treat for the adults in your house can be roasted brussel sprouts. It’s a scientific fact that anyone under the age of 18 hates these tasty little babies so savor them before your kids figure out what a tasty treat they are. Roasted sprouts can be packed for a lunch for a clean, healthy meal. If you’re looking for a quick and easy meal for one or two then grab some local, organic asparagus. Put the asparagus in the oven at 425’ and let them sit until they’re almost done. While the asparagus is roasting, place 3-4 eggs in a bowl and let the eggs become room temperature. When your asparagus looks like it is about close to done remove the dish from the oven and carefully add the eggs. Since the eggs are room temperature they won’t start cooking once they touch the hot pan. Place the pan back in the oven for five minutes (all depending on how you like your eggs). Sprinkle with whatever garnish you would like and enjoy. While you’re relaxing after your delicious meal take a second to savor your yummy cup of Nuez de la India and look back on how healthy your life.
